Abstract

By the orthogonal design, the dosage of lactase, hydrolysis time, hydrolysis temperature and pH on the hydrolysis rate of lactose are studied in low-lactose milk manufacture. The hydrolysis rate of milk hydrolized with 1500 NLU/L lactase at 38 ℃ and a pH of 6.8 for 3 hours is 75.2%. Moreover, the acidity and microbial indicators also meet the requirement. At the same time by improving the manufacture process after hydrolysis, the browning of low-lactose milk is solved.
