Abstract
Whey protein was hydrolyzed with Alcalase.Antioxidant activity of the hydrolysates,including reducing power,inhibition of TBARS,and DPPH radical scavenging activity,was evaluated.The results indicated the following optimum hydrolysis conditions: concentration of substrates = 5%,pH = 8.5, = 2%,Temperature = 65 °C,and hydrolysis time = 5 h.The study demonstrated that enzyme-hydrolyzed whey protein can act as a hydrogen donor,as well as a radical stabilizer to inhibit lipid oxidation.
