Preparation of hydrolyzed animal protein from chicken bone paste with Alcalase

Abstract

Fresh chicken clay was hydrolyzed by Alcalase.The result showed that optimal conditions for hydrolysis were preheating treatment 90 ℃ for 30 min,chicken clay suspension concentration 10%.At the temperature of 60 ℃,pH=9.5 for 2.5 h,enzyme dosage is 6 000 U/g,degree of hydrolysis is up to 17.3%.Enzymatic hydrolysis is yellow,fragrant and suitable for chicken flavor.
