Abstract

70% maturity of Williams banana were treated with different diluted dilute concentration 40%ethrel(1 000 mg/kg and 1 500 mg/kg), and ripened under two different temperature(16℃ and 22 ℃)indoor. Results showed that, there was no obvious difference between the effect of ripening banana treated with different concentration ethrel: samples evenly maturated, the surface was slippery and the nutrition of banana losing was not too much. Banana ripening under the condition of 22℃ matured faster than banana ripening under the condition of 16℃, and the edible quality was better, which was suitable for launching to market rapidly. When the safety issues of ethephon residues and the cost of ripening were considered together, we proposed banana ripened in 1 000 mg/kg 40% ethrel at room temperature(22℃).
