Abstract
The extraction conditions for cottonseed protein with both the alkali method and the salt method were investigated by the single factor and orthogonal experiment.Moreover,these protein extraction methods were also compared from the protein extraction rate and the purity.The resulting optimum condition of extracting cottonseed protein was sodium sulphite and the technology conditions were enumerated as follows:temperature 40 ℃,mass concentration 20 g/L,ratio of water to stuff 10∶1,extraction time 70 min.And the resulting extractionrate of protein was 32.15 % and the purity of protein was 99.6 % under the optimum conditions.
