Abstract
[Objective] To study the best extraction process and stability of red pigment from jujube peel,so as to provide basis for the development and utilization of the pigment.[Method] The jujube was extracted with NaOH,and the extraction process was optimized by orthogonal experiment,the stability of pigment was observed under different pH,temperature and when added with antioxidant and reducing agent.[Result] As concluded from the orthogonal experiment,the influential order of each factor on the extraction of pigment was extractant concentration extraction temperature solid-liquid ratio;the best extraction conditions were 0.2 mol/L NaOH concentration,80 ℃ of temperature,3 h of extraction time and 1∶ 15(g/ml) solid-liquid ratio.The stability test showed that the pigment was stable except under acid conditions.[Conclusion] It is simple to extract the pigment with NaOH,the extracted pigment is stable and can be popularized.
