Abstract
In this text,the best extraction condition and its stability of pigment from eggplant peel was studied.The experiment shows that the best condition was using the distilled water as extraction reagent,with its ratio of liquid to solid being 50 ∶1(mL,g),under the condition of pH4,with 3 h extraction,and the temperature of extraction 30 ℃.Stability experiment showed that temperature,sunlight and food additive had little effect on the pigment,but Ca2+,Ba2+,Al3+ had severe disadvantageous effect.
