Abstract

The ethanol extraction of red pigment from sorghum was studied.The extracting conditions that effected on the extraction were explored,such as ethanol volume,pH,solid-liquid ratio,extracting temperature and time.The results showed that the best technology was as follows: ethanol concentration of 60%,pH 3,solid-liquid ratio of 1:5,temperature of 70 ℃,and extracting time of 2 h.
