Abstract
The buffalo milk peptide was prepared with alkaline protease,enzymolysis conditions was optimized by single-factor and orthogonal tests,which were evaluated by the hydrolysis degree and DPPH scavenging rate,the result shows that : the optimun conditions are: concentration of substrate 5%,enzyme addition 10 000 U/g substrate,enzymolysis pH10.5,enzymolysis time 2.5 h,enzymolysis temperature 60 ℃,In this process,the hydrolysis degree and DPPH scavenging rate reach 30.46%±0.15% and 69.13%±1.22%.
