Abstract
The enzymatic hydrolysis of rapeseed protein isolate was studied.Through the single factor experiment,the effects of enzyme category,concentration of substrate,enzymatic hydrolysis time,the dosage of enzyme were described.The results showed that the optimal conditions were: enzymatic hydrolysis time 6 h,temprature 50℃,pH 6.0 mass fraction of substrate 1%,and the dosage of Flavourzyme 92 000 U/g.Under the optimal conditions,the degree of hydrolysis was 32.09%,the recovery rate of nitrogen was 16.12%.The double-low rapeseed protein peptides had better antioxidative property and ability to clear hydroxyl free radical and the effects increased with the increase of hydrolysis degree.
