Abstract

Porcine blood is a cheap protein resource and its nutrition value is very high.There is plenty of protein in porcine blood and the primary proportion is hemoglobin.Therefore,researches on hemoglobin and its hydrolysate have been paid more attention in domestic and abroad.In order to find the best protease for enzymatic hydrolysis of porcine hemoglobin,a hydrolysis was conducted by the single and combination of alcalase,papain and neutral protease.The results showed that alcalase was the optimal protease for enzy- matic hydrolysis of porcine hemoglobin.The hydrolysate of alcalase measured by mass spectrograph in range of 800~2400 kDa MW was obtained,and the hydrolysate in range of 800~1260 kDa MW account for a great many.The hydrolysate of alcalase tested by automatic amino acid analyzing showed that it contains 17 kinds of amino acids and in which 8 kinds of essential amino acids amount to 50.93% of total amino acids.This result showed that the hydrolysate of alcalase was perfect resource of additive of making foodstuffand feedstuff.
