Abstract

Objective The effects of different light qualities on nutritive quality of radish sprouts were studied.Methods Radish sprouts were cultured in red light,blue light,red/blue light generated by light-emitting diode applied,and white light generated by fluorescent lamps was used as control.Results The contents of vitamin C(VC) and protein were the highest under the red/blue light and blue light,but the nitrate content was significantly increased under the blue light.The crude fibre content was the highest and the contents of VC,flavonoids,nitrate and protein was the lowest under red light.The white light was the most effective for the increase of the contents of flavonoids.Conclusion The nutritive quality of radish sprouts was best when grown under the red/blue light,and was worst under red light.
