Abstract
The research was taking the corn as raw material,choosing the best extraction craft through single factor experiment and the orthogonal experiment to product maize yellow pigment,at the same time doing investigation of stability.The test results indicated that the best extraction conditions was as follows: taking 95% alcohol as extract,extraction temperature 75℃,extraction time 2 hours,the pH=7,the material fluid compares(the quality: Volume)1:8.The pigment light resistance was bad,but its thermal stability was strong.Maize yellow pigment was stable to acid,alkali,reducing agent,food additive,Na+ and K+,but unstable to the oxidant,Al3+ and Fe 3+.
