Abstract

Carcass performance and meat quality of 100 finishing pigs of 80~140 kg body weight were studied.And the changing pattern and the degree of correlation of carcass and meat quality accompanying body weight were analyzed.The results showed that at the stage of 80~100 kg with the weight increase,lean meat percentage decreased significantly.At the stage of 100~140 kg,with the weight increase,carcass straight length,carcass slanting length,eye muscle area increased extremely.The correlation degree of carcass traits and meat traits were either strong or weak,correlation coefficients were either positive or negative.The same traits had strong positive correlation,the adverse traits had strong negative correlation.In the 80~140kg body weight stage,carcass weight,dressing percentage,carcass straight length,carcass slanting length,eye muscle area,ham percentage,average fatback thickness,lean percentage,skin and fat percentage,a,b and the body weight presented remarkable regression relations,and the linear correlation between other indexes and body weight was not obvious.
