Abstract
Microencapsulation of mustard oil using gelatin(GE)and arabic gum(AG)as wall materials by complex coacervation is investigated.The influence factors such as wall material concentration,GE/AG radio,core/wall radio,pH value,reaction temperature and time on the forming of microcapsule.The optimal technical parameters are:wall material concentration of 1%,GE/AG radio of 1∶1,pH 3.4,temperature of 40℃and time of 20min.The embedding rate of microcapsule products obtained under the above conditions is 92.66%.
