Abstract
Using gelatin and chitosan as wall material and the small grinding sesame oil as the core material,gelatin-chitosan microcapsules was prepared by complex coacervation.Results showed the best ratio of gelatin to chitosan,emulsion speed,substrate concentration,pH value the system concentration,and cross-linking time were 4:1,5000~7000 r/min,1%~2%,6.0~6.4 and 60~90 minutes,respecively.
