Abstract
The isolated protein of Shendou from Qianjiang district,southeast area of Chongqing,was used as raw materials.And the antioxidant properties of its hydrolyzate by enzymatic method were analysed to try to provide ideas and methods for the development and utilization of shendou.Same amount of papain,neutral protease and alkaline protease was used to hydrolysis the isolated protein to different extent at optimum pH values,temperatures of each.And the reducing power,superoxide anion radical scavenging,hydrogen peroxide scavenging of the protein and hydro were investigated.The results showed that the antioxidative activities of the enzymolysis liquids were enhanced significantly by three proteases.And the enzymatic hydrolysate treated by neutral protease for 1h was of the most capability of superoxide anion free radical scavenging,and better reducing power and hydrogen peroxide scavenging ability,its hydrolysis degree(DH) was 2.46.
