Abstract

In this paper, high temperature resistance protective agents from animal, plant and microorganism on the preparation of direct-in-vat Lactobacillus acidophilus starter culture were studied. The result shows optimal protective agent constituent were 15% skim milk with 8% plant polysugar and 3% animal peptides and 5% algae extract, the survival rate of Lactobacillus acidophilus is 72. 2% , colony-forming unit per gram in the starter culture of spray-drying process make is 8. 7 × 108.
