Abstract
This paper researched the extracting technology of lycopene of adding pectinase and cellulase. The optimum enzyme dosage was determined,that was 0.5 g/100 g tomato, the proportion of cellulase and pectinase was 2∶1, the temperature was 55℃, the time and pH were 2 h and 4.5 respectively. The results indicated that it could shorten the extracting time and enhance the recovery yield of lycopene to add pectinase and cellulase.
