Abstract

Pectinase and cellulase was used to extract Lycopene from tomato.The best production technics of extracting lycopene was that the optimal proportion of pectinase and cellulose is 4∶1;the enzyme dosage is 0.5g/100g tomaro;the enzymolysis temperature is 40 ℃;enzymolysis time is 4 hour and pH of enzyme solution is 4.The results indicates that it could enhance extracting rate of lycopene.
