Abstract
The objective of this study was to provide scientific basis for melon breeding and flavor evaluation by using headspace solid phase microextraction(SPME) and GC-MS method for volatile analysis in netted melon Wangluoshidai 3 fruits.Sixty four kinds of compounds were recovered consisting of 25 esters,5 aldehydes,8 alcohols,4 ketones,5 acids,10 hydrocarbon,2 sulfur compounds and 3 others.The key volatile compounds of Wangluoshidai 3 included acetic acid phenylmethyl ester,1-butanol 2-methyl-acetate,acetic acid 2-phenylethyl ester,acetic acid hexyl ester,3-hexen-1-ol acetate,2,4-nonadien-1-ol,3,6-nonadien-1-ol,3-nonen-1-ol,2,6-nonadienal,2-nonenal,which account for 81.09% of the total peak areas and had an important effect on its flavor.
