Study on Antioxidant Activity of Extracts of Celery Leaf

Abstract

In this paper,inhibiting effect of the extracts of celery leaf on lipid peroxidation was studied,antioxidant activity was determined by using the assay of DPPH radical.The results showed that the extracts of celery leaf had strong effect of scavenging free radicals,but it was weaker on the inhibition of lipid peroxidation.A negative correlation existed between total flavonoid content and antioxidant activity.Extracts by mean of alcohol concentration 80% have shown higher antioxidant activity than the other two extracts.
