Abstract
In this paper,the scavenging ability of 3 kinds of Lactic acid bacteria’s cells from sour bean milk strains and its cell-free extract on the reducing activity,hydroxyl radicals,DPPH free radicals and super oxide anion radicals were studied by comparison. The experiments shown all of 3 kinds of cells from sour bean milk and its cell-free extract had some reducing activity. Each of them had scavenging ability on hydroxyl radicals and DPPH free radicals,but there exist certain difference,they had scavenging ability on super oxide anion radicals yet,and there exist a litter difference.
