Abstract
Ethanol extraction and ultrasonic extraction used in the extraction of gardenia yellow pigment were discussed, and the relevant optimum conditions were determined with orthogonal experiments. The results showed that the ultrasonic extraction excelled the traditional method in the yield and color value at lower temperature and shorter time. The optimum conditions were determined as follow using ethanol/water (v:v=5:5) as the solvent, extracting 1 h at 20 ℃,and the gardenia fruit/solvent ratio was 1:12.The yield and the color value of the extracted pigment achieved 98.84% and 70.72, respectively.
