Abstract

By spectrophotometric method,effects of some factors on extraction rate of flavaoids from water chestnut were studied. The orthogonal design of L9(34) was used to confirm the optimal technological parameters. The results showed that the content of total flavonoids in water chestnut is 0.8621%,and the optimum conditions of ethanol extraction are obtained as follows:extracting material with 50-times 60% ethalnol at 70℃ for 3 h.
