Abstract
In this paper,the extracting technology of royal jelly protein was studied. Two methods were adapted,alkali-extracting and salt-extracting. The results showed that the optimum technological conditions of alkali-extracting method were as follows: pH=10,solid-to-liquid ratio was 1:4,extracting temperature was 35℃,extracting time was 2h,precipitating time was 1h,precipitating temperature was 5℃,the ratio of extraction was 75.17%; The optimum technological conditions of salt-extracting method were as follows: pH=7.0,solid-to-liquid ratio was 1:8,extracting temperature was 25℃,extracting time was 2h,precipitating time was 1h,precipitating temperature is 5℃,ionic strength is 0.65,the ratio of extraction was 83.62%. Making use of salt-extracting method could lead to higher ratio of extraction but lower purity.
