The technology of enzymatic hydrolysis for the muscle of Trionys sinensis

Abstract

This paper is comparative research of enzymatic hydrolysis condition of subtilisin to Trionys sinensis protein.The analysed results of the orthogonal experiment indicate that the optmum conditions for the papain enzymatic hydrolysis were enzyme concentration 6 g/kg,temperature 65 ℃,pH 5.5,taking time 8 h.Then the content of amino nitrogen was 0.262 g/kg.Also,the analysed results of the orthogonal experiment indicate that the optmum conditions for the pepsin enzymatic hydrolysis were enzyme concentratio 42 g/kg,temperature 60 ℃,pH 1.5,taking time 6 h.Then,the content of amino nitrogen was 0.179 3 g/kg.Pepsin enzymatic hydrolysis with better result than papain enzymatic hydrolysis,with pepsin taking time 6 h.The content of amino nitrogen was 0.179 3 g/kg,but the content of amino nitrogen was 0.179 3 g/kg with papain taking 8 h.Enzymes were inactivated at 85 ℃ for 15 min,and the hydrolysate was filtered with diatomite.With bright colour and good taste,the hydrolysate was very good raw material for health food.
