Abstract

Zinc- enriched yeast was called yeast zinc or zinc yeast,which was a yeast strain with zinc-accumulating ability that was obtained from adding inorganic zinc to the yeast during its process of growing development.As a kind of safe raw material of supplementing zinc,zinc- enriched yeast was widely used in various aspects. It can make full use of the waste of zinc- bearing to save resources,and was a future direction of supplementing zinc. The research progress of the zinc- enriched yeast was briefly reviewed.
