Abstract

Tea polysaccharide is a kind of larger molecular weight and an active water-soluble compound polysaccharide.According to the analysis of Ultraviolet(UV) 、Infrared(IR) and Gas Chromatography(GC),tea polysaccharide is composed of sugar,pectin and proteins and other substances.In order to more clearly understand the situation of tea polysaccharide and the further development and research,the extraction,separation and purification and molecular composition and other aspects of tea polysaccharide were reviewed,and the problems existing in the research were analyzed,the development prospect was forecasted.
