Abstract

This paper studied the hydrolytic process of the rapeseed protein by Flavorzyme. The optimum conditions of enzyme is hydrolysiste technology that we got by orthogonal experiment was 3 000 U/g,temperature was 55 ℃,pH was 6.5 for l hour,time was 4h, [S] was 2%.Under the optimum conditions,the degree of hydrolysis( DH) can be approached to 14.06%.
