Abstract
The fatty acid components in muscle tissues of two local chickens under different farming modes were studied.The results showed that the fatty acid components in muscle tissues of Hongshan and Jianghan chicken were mainly oleic acid, palmitic acid,linoleic acid, stearic acid, arachidonic acid and pentadecadienoic acid(over 84% of total fatty acid), in which the unsaturated fatty acids(USFA) was more than 63%. The content of polyunsaturated fatty acids(PUFA) and essential fatty acids(EFA) in leg muscle were more than that of chest muscle. Breeds and sexes had significant or extremely significant role on the two indexes. The contents of linoleic acid and linolenic acid in leg muscle were higher than that of chest muscle of the two chickens. It is indicated that the meat quality of leg muscle was better than that of chest mucle. There was no significant difference with the content of most fatty acid. The contents of peanut triene acid and DHA of Hongshan chicken under stocking mode were significantly lower than those under captive mode.
