Abstract
The protein is extracted from black bean by microwave-assisted.Based on single factor test,the effect of microwave power,microwave time,solid/liquid ratio,pH on the extraction rate of protein is studied according to orthogonal test.The test results show that the influences of these factors on different degree is an order of microwave powerpHmicrowave timesolid/liquid ratio.The optimum conditions are as follows:extraction pH of 9.5,material-liquid ratio of 1∶15,extraction time of 4 min and microwave power of 480 W.The extraction rate of protein is 85.53% under the optimal extracting conditions.
