Abstract
Residual antimicrobials in food constitute a risk to human health.So public health agencies in many countries detected residues of antimicrobial agents in animal derived food by liquid chromatography-mass spectrometry(LC-MS).In this paper the LC-MS technique is discussed from the aspects of sample-treatment and MS detection systems to analyse kinds of antimicrobials in various biological matrices,and the future development is also predicted.
