Abstract
The fatty acid compositions of the oil extracted from Xinjiang carrot seeds by Soxhlet extraction were analyzed by gas chromatography-mass spectrometry(GC-MS).The results indicated that the main fatty acid compositions of the carrot seed oil were oleic acid,linoleic acid,palmitic acid and stearic acid.The content of unsaturated fatty acid was high,and the content of oleic acid was over 75%.
