Abstract
The extraction process of flavonoids from mulberry leaves was studied using enzymatic hydrolysis of cellulase and the optimum parameters about cellulase extraction were obtained by the single factor and orthogonal experiments,which compared with alcohol extraction. The results showed that the optimum process conditions includes extraction time 3h,temperature 55℃,enzyme dosage 0.01%,solid-liquid ratio 1∶10.
