Abstract
The factors of determination conditions of total sugar from potato starch by anthrone colorimetry was studied by the orthogonal test in this paper.The results showed that the optimum determination conditions were as follows:after extract soluble total sugar from potato starch for 10 min with 80 % ethanol,reaction time for15 min, colour-display reagent consumption for 9 mL, reaction stalling time for 30 min,reaction temperature for 95 ℃.The yield can reach 23.01 mg/100 g under the optimum determination conditions.
