Abstract

Antioxidant activities of five different solvent extracts from onion in vitro were evaluated by measuring its reducing power,chelating ability and its scavenging capacity on the hydroxyl radical,DPPH radical and superoxide anion radical.The experimental results showed that the aqueous extract from onion posses strongest reducing power,best scavenging activity to DPPH radical,hydroxyl radical and superoxide anion radical,however,the acetone extract from onion posses strongest chelating activity on Fe2+,conclusively,the aqueous extract from onion posses best antioxidant activity.
