Research progress on strains screening and fermentation optimization of pectinase

The pectinase refers to various enzymes which can decompose pectin.The pectinase was initially extracted from oranges by MacDonnell.As an important industrial product,It has immeasurable application value.This paper summarized the research progress of the production of pectinase,strain screening and the optimization of fermentation conditions.We hope to provide some references to relevant enterprises.
