Abstract
The tannase activity was determined by ultraviolet spectrophotometry and the technological condition of tannase production from Aspergillus niger under semisolid fermentation was optimized.The results showed that the optimum technological conditions of tannase production from Aspergillus niger under semisolid fermentation were 3.3% gallnut,2.5% foam,initial pH5.0,inoculation amount of 1×108 spores,60mL medium,160r/min,30℃ and 72h.The tannase activity produced under the optimum technological condition can reach 144.39U/mL.
