Effects of Post-anthesis High Temperature Stress on Grain Quality of Three Wheat Cultivars with Different Gluten Strength

Abstract

Under pot-cultivated conditions in the Experimental Farm of Henan Agricultural University,three wheat cultivars with different gluten strengh were chosen to investigate the effects of post-anthesis high temperature stress(HTS) on protein and starch content.The HTS was carried out in wak-in chambers,in which the temperature was controled around 38℃ and the wheat in pots was treated for 2 days(5 hours per day).The results indicated that Zhengmai 366,a strong gluten wheat,was affected the most by HTS in the three cultivars,in which the grain crude protein,albumin,gliadin,glutenin and amylose contents were significantly increased by high temperature,but the grain yield,globulin,protein and starch yield,grain starch content,amylopectin content,and amylopectin/amylose was reduced.With respect to the treated time,the effects of HTS was a little more serious at 20 days after anthesis than at 10 days after anthesis.
