Abstract

The optimum extracting conditions of flavonoids from dry celery and west celery were studied with the ethanol concentration 40 %(mass concentration),temperature 70~80 ℃,solid-liquid ratio 1 g∶15 ml and extraction time 3 h.The contents of total flavonoids in whole plant, leaf and stem of dry and west celery were tested and compared to west celery, the contents of total flavonoids in whole plant, leaf and stem of dry celery were more abundant.
