Abstract
Many research studies are mentioned in scientific literature regarding the quality parameters of monofloral honeys. The purpose of this study is to make a physico-chemical characterization of three monofloral types of honey and honeydew in order to realize a general profile of these honeys. Analytical methods applied for this research were elaborated by International Honey Commission in 2002 and are used in European Community. Physico-chemical analyses were developed for all 24 samples consisting in ash, water, color and sugars content.
