Abstract
Kefir is consumed in the Soviet Union, Poland, Czechoslovakia, the countries of Scandinavia and Hungary. Cultures and production methods in these countries differ, thus leading to different qualities and properties of the product. Kefir is obtained from appropriately prepared milk by using kefir grains whose microflora is capable of carrying out two types of fermentation to produce both lactic acid and alcohol
