Glutaraldehyde modification of collagen hydrolysate obtained from chrome shavings

Abstract

Chrome shavings were treated with de-chroming agents and then hydrolyzed with alkaline protease. The obtained collagen hydrolysate was modified with glutaraldehyde. Effects of such factors as pH, glutaraldehyde level, reaction time, and temperature on the crosslinking reaction during the process of modification were included and the optimum modification condition was put forward. Changes of such functional property as emulsification capacity, emulsification stability, water absorption, oil absorption, water retention of the collagen hydrolysate product before and after the modification reaction were examined.
