Abstract
This chapter considers how environmental and management variables affect the nitrate levels in plants used as food. It also reviews the extensive literature which considers the impacts of agricultural practice on nitrate in surface waters and groundwaters. The extent that changes in farm management practices, particularly the adoption of organic farming systems, might have on dietary intake of nitrate is also considered.
