Prion diseases: meat safety and human health implications.

Abstract

This chapter discusses the nature, strains, genetics, route of transmission, and risk factors of prion diseases or transmissible spongiform encephalopathies (TSEs). TSEs include scrapie in sheep and goats, chronic wasting disease (CWD) of deer, Creutzfeldt-Jakob disease (CJD) and its bovine spongiform encephalopathy (BSE)-related version (variant CJD (vCJD)) in humans. The distribution of infectivity in body tissues of sheep and cattle used in food production; clinical symptoms and signs in humans and sheep; treatments; legislation and regulatory issues are also discussed.
