Abstract

The watermelon paste was pre-treated by centrifugal dehydration,frozen,isopropanol treatment,and ethanol treatment.The effect of pre-treatment method on lycopene extraction was studied.The results showed that the optimum lycopene extraction conditions from watermelon were as follows: the watermelon paste was pre-treated by centrifugal dehydration or frozen,extraction solvent was petroleum ether plus acetone(1∶1),ratio of material to liquid was 1∶5,extraction time was 20 minutes,and extraction temperature was 45 ℃.
