Abstract

Natural pigment is the direction of pigment development in food industry.Functional natural pigment is the focal point.The paper discusses some kinds of functional natural pigments such as,gardenia yellow,lutein,lycopene,capsanthin,curcumin,astaxanthin.It is described in the aspects of functionality and application research to boot pigment industry.
