Abstract

Abstract The harvesting and handling, packaging and postharvest ripening of tomatoes are described. Temperature management (cooling after harvest, and temperature during storage, transport and marketing), and the use of controlled atmospheres during storage and modified-atmosphere packaging are discussed.
