Abstract Although gum arabic has been an article of commerce for over 4,000 years\ no definitive assay for this heterogeneous food additive exists. Using immunoassay technology a sensitive, rapid and specific ELISA for Acacia senegal gum has been developed. The assay can differentiate Acacia seneKal gum from other Acacia gum species and also from other commonly used food hydrocolloids including other tree exudates such as gums ghatti, tragacanth and karaya.
